RAVA PANCAKES..

I am going to share recipes which I find interesting and which are quick to cook for our kids . These recipes are found while browsing on the net or just your own experiments in the kitchen. 
These are the recipes which I have tried and tested and I know will taste great..

RECIPES SHOULD BE SIMPLE, HEALTHY AND QUICK.



Here is one such recipe which we can make with everyday ingredients , with little time at hand..


A quick and simple snack option—you just need to soak the semolina for 30 minutes, and you’re all set to make pancakes without the hassles of grinding. I’ve added cabbage, carrot etc. To the semolina pancakes. You can feel free to add other grated veggies too, if you wish.

Ingredients
1 1/2 cups semolina (rava)
3/4 cup fresh curds (dahi)
1/2 cup finely chopped cabbage
1/2 cup grated carrot
1/4 cup finely chopped coriander (dhania)
1 tbsp finely chopped green chillies
salt to taste
2 tsp fruit salt
4 tsp oil

For Serving
Method
1.      Combine the semolina, curds and 1 cup of water in a bowl, mix well and allow it to soak for 30 minutes.
2.    Add the cabbage, carrot, coriander, green chilies and salt and mix well.
3.     Just before making the pancakes, add the fruit salt and 2 tbsp of water to the batter.
4.    When the bubbles form, mix gently.
5.     Add 2 tsp of oil and mix gently.
6.     Grease a non-stick mini uttapa pan using a little oil.
7.     Pour approximately 1½ tbsp of batter in each uttapa mold and spread it lightly.
8.     Cook using a little oil, till they turn crisp and golden brown from both the sides.
9.     Repeat steps 7 and 8 to make one more batch of mini pancakes.
10.                        Serve immediately with coconut chutney.

You can always change the vegetables added or just leave them out. 
I would prefer if the dahi is a little sour , so when you have some leftover dahi which the family does not want to consume please make this for breakfast 
I also add a little rice flour to the above mixture .. I love the sticky feel . Rava gives it a little grainy texture .. pls try this and put in your comments for us to add or delete in the recipe.
